Simple syrup = Sugar syrup, 2 parts sugar to 1 part water

Bellini
- 1.5 M white peach puree
- 4.5 M Prosecco
- Champagne flute glass
Pour peach puree in the champagne flute. Top up with chilled prosecco. Give one stir.

Daiquiri
- 2 M white rum
- 1/2 M simple syrup
- 1/2 M lime juice
- 1/4 M grapefruit juice
- 1 tsp maraschino liqueur (e.g., Luxardo)
- Ice cubes
- Crushed ice
- Lime wedge for garnish
- Old fashioned glass
Shake with ice cubes in cocktail shaker. Strain over an old fashioned glass filled with crushed ice. Garnish with lime wedge.

Dark and Stormy
- 2 M dark rum
- 4 M ginger beer (not ginger ale)
- Ice cubes
- Lime wedge for garnish
- Collins glass
Fill glass with cracked ice. Add rum and ginger beer. Stir and garnish with lime wedge.
Ginger beer: Fever Tree
Rum: Gosling’s Black Seal Rum / Captain Morgan’s Original Spiced Rum / Kraken Black Spiced Rum

French 75
{Similar to Tom Collins – Uses sparkling wine instead of soda}
- 1 M gin
- 1 M lemon juice
- 1/2 M simple syrup
- 2 M sparkling wine / champagne
- Ice cubes
- Lemon peel for garnish
- Collins glass
Shake gin, lemon juice, simple syrup and ice cubes in cocktail shaker. Add sparkling wine / champagne to shaker. Strain into Collins glass filled with ice. Twist lemon peel on the surface and drop in the drink.

Jack Rose
- 1.5 M Applejack (Laird’s)
- 3/4 M lemon juice
- 1/2 M Grenadine
- Ice cubes
- Lemon peel for garnish
- Cocktail glass
Shake with ice in cocktail shaker. Strain into cocktail glass (no ice). Garnish with lemon peel after twisting.

Mai Tai
- 1.5 M white rum
- 3/4 M orange curacao
- 3/4 M lime juice
- 1/2 M orgeat syrup
- 1/2 M dark rum
- Ice cubes
- Lime wheel and mint spring for garnish
- Highball glass
Shake white rum, curacao, lime juice and orgeat with ice in cocktail shaker. Pour into glass filled with ice. Float the dark rum on top. Garnish with lime wheet and mint sprig.

Manhattan
- 2 M rye / bourbon whiskey
- 1 M sweet vermouth
- 2 dashes Angostura bitters
- Ice cubes
- Maraschino cherry for garnish
- Cocktail glass
Stir in a mixing glass with ice. Strain into cocktail glass (no ice). Garnish with maraschino cherry.

Margarita
- 1 M tequila
- 1/2 M triple sec
- 1/2 M lime juice
- Ice cubes
- Lime wedge for garnish
- Salt for glass rim
- Cocktail glass
Shake with ice in cocktail shaker. Run a lime wedge outside the rim of a chilled cocktail glass and roll the rim in salt. Strain into the glass. Garnish with lime wedge.

- 2.5 M gin (London Dry)
- 0.5 M dry vermouth
- Ice cubes
- Lemon twist or olive for garnish
- Martini / coupe glass
Stir with ice cubes in a mixing glass. Strain into martini / coupe glass (no ice). Garnish with lemon peel after twisting, or with olive.
{Dirty martini: Add brine of olive}
{Gibson: Garnish with cocktail onion instead of lemon peel / olive}

Moscow Mule
{Similar to Dark and Stormy – uses vodka instead of rum}
- 2 M vodka
- 1/2 M lime juice
- 4 M ginger beer (not ginger ale)
- Ice cubes
- Lime wedge for garnish
- Copper mug
Add ingredients in copper mug filled with ice. Stir and garnish with lime wedge.

- 1 M gin
- 1 M vermouth rosso
- 1 M Campari
- Ice cubes
- Orange slice for garnish
- Old fashioned glass
Stir in a mixing glass with ice cubes. Strain over fresh ice into an old fashioned glass. Garnish with orange slice.

Old Fashioned
- 1 tsp simple syrup
- 2 dashes Angostura bitters
- 2 M bourbon whiskey
- Ice cubes
- Orange peel for garnish
- Old fashioned glass
Stir in a mixing glass with ice cubes. Strain over fresh ice into an old fashioned glass. Garnish with orange peel after twisting.

- 1.5 M scotch whiskey

- 1.5 M cognac
- 3/4 M Cointreau
- 3/4 M lemon juice
- 1 tsp simple syrup

Shake with ice cubes in cocktail shaker. Strain into cocktail glass (no ice). Garnish with orange peel after twisting.

Tom Collins
- 2 M gin
- 3/4 M lemon juice
- 1/2 M simple syrup
- 2 M soda water
- Ice cubes
- Lemon peel for garnish
- Collins glass
Shake gin, lemon juice, simple syrup and ice cubes in cocktail shaker. Add soda water to shaker. Strain into Collins glass filled with ice. Twist lemon peel on the surface and drop in the drink.
Optional: Add maraschino cherry to garnish.

Vesper Martini (James Bond – Shaken, not stirred!)
- 2 M gin (Gordon’s)
- 2/3 M vodka
- 1/3 M Lillet Blanc
- Ice cubes
- Lemon peel for garnish
- Cocktail glass
Shake with ice cubes in cocktail shaker. Strain into cocktail glass (no ice). Garnish with lemon peel after twisting.

Whiskey Sour
- 2 M bourbon whiskey
- 3/4 M lemon juice
- 1/2 M simple syrup
- 1/2 M egg white (optional)
- Ice cubes
- Angostura bitters for garnish
- Old fashioned glass
Dry-shake (without ice) in a cocktail shaker. Then add ice cubes and shake again. Strain into an old fashioned glass (no ice). Garnish with 3-4 drops of Angostura bitters over the foam.
